Luna Brewing & Distilling

Luna Brewing and Distilling is a family-run passion project focused on developing Australian agave spirits (we can't call it tequila) using 100% locally grown agave.

The Australian agave industry is still in its infancy with little local knowledge about how agave is grown, matures and can be transformed into products such as agave spirits.

Mexico remains the only place where the ancestral knowledge exists at scale; where agave cultivation and spirit production have been refined and passed down from fathers to sons over many generations.

To give Justin the opportunity to learn this artisanal craft from those who have lived this their entire lives we are proud to provide funding for him to complete a Tequila and Mezcal Study tour in Mexico.

What makes this application super exciting is that this is the first application for anything to do with agave spirit production and it is a potential new skill set coming back into the State.  We can't wait to hear more about it!
